I finished reading the book. Learned a lot and it was eye-opening for me.
Hoping to introduce the essence of his philosophy, but he would say, " it's not MY philosophy. It is the nature of Japanese cooking. " :-)
I will try to explain some sentences which impacted me.
One phrase from the book;
There is " Nature " behind Washoku ( Japanese Food ) and there is " Philosophy of Human Beings" behind Western Food.

Life, Thought, Food and Travel....Life is full of struggles, but there are small happiness around you. Eat well.... for it means respecting yourself and your life.

Nezu Museum --- Introduction to Ceramics
Enjoy the History of Japanese Plates
If you like cooking or eating, you probably enjoy tableware as well.
I cannot afford expensive ones, but still I try to set up something comfortable and make the food scene enjoyable.
Different from other countries, the size of our plates vary from tiny toy like size to large size. I didn't know the Chinese large plates were originally made and exported to Islam countries.
Enjoy the exhibition! In this heat ( it's at least 30 degrees centigrade in Tokyo nowadays, the forecast on my phone says will go up to 37 degrees on Tuesday! ),
you will enjoy walking in the garden. They have beautiful garden with woods and ponds.
